Milky, luscious, prone to running across the plate.
Moses Sleeper is named for a Revolutionary War-era scout. He was cut down with his comrade Constant Bliss along Bayley Hazen Road in 1781.

American Cheese Month cheese of the day: Jasper Hill’s Bayley Hazen Blue. Such a stunning cheese.
Raw milk from Ayrshire cows in Vermont makes for a delectably fudgy, dense paste. Blue mold is speckled throughout and imparts a gorgeous spicy quality that reminds us of licorice.
A perfect fall cheese because it is awesome with: pears, figs, apples, bread with fruit in it, and sweet dessert wines.
