This is the #1 question everyone asks of cheesemongers. It’s also the hardest to answer! Really depends on the day, you know? But right now I think everyone is jammin pretty hard on Jasper Hill Harbison. It’s creamy and complex with a distinct flavor of - no joke - French’s Mustard. It’s like a bite of summer. It’s a memorable cheese, a cheese you will think about long after you’ve scraped every last morsel from the inside of the bark ring that holds it together.
