here are two (out of hundreds of) delicious directions to go with this:
1. mild and melty - young asiago, basic cheddar, or YUMMMM pepperjack.
2. crumbly and tangy - castelrosso is buttery/salty/crumbly goodness, queso fresco is classico, and manouri is a nice sheepy alternative.
